Scrambled Egg Muffins

We like to eat eggs in the morning. Actually, Benjamin and Joshua really prefer them, I just like to eat a protein bar and coffee. Monday mornings often start with a fussy two year old and two tired adults due to our Sunday Marathon (as i like to call it), so with great effort to keep things simple I decided to try these muffins. I made the muffins Sunday night (tonight) and popped them in the fridge. They tasted great. I think i need to tweak the recipe to decrease our cholesterol and fat intake -- possibly by simply using more egg whites or egg beaters.


SCRAMBLED EGG MUFFINS

Ingredients

* 8 slices turkey bacon (the recipe called for 1/2 lb sausage)
* 12 eggs
* 1/2 cup chopped onion
* 1/2 cup chopped green pepper
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1/4 teaspoon garlic powder
* 1/2 cup shredded sharp cheddar cheese (i used low fat)

Directions

1. Brown sausage; drain well. (i microwaved the turkey bacon)
2. Preheat oven to 350°.
3. In a bowl, beat eggs, then add onion, green peppers, salt, pepper and garlic powder.
4. Stir in bacon and cheese.
5. Spoon 1/3 cupfuls into 12 greased muffin cups.
6. Bake at 350° for 20-25 minutes or until a knife inserted comes out clean.
